Things I have Cooked

Here I will feature things I have cooked and actually turned out good. As part of my New Year’s goals/resolutions, I am trying to cook something new each week. If you want the recipes, let me know and I can send them to you. For now, name and pictures!

January 4: Albondigas

Could have used sour cream but it was still good. Especially when I added coriander to it.

I didn't know how to pepper so I cut it in half and knifed and forked it.

January 22: Chicken nuggets with Garlic Aoli sauce (all made from scratch)

January 27: “California” nachos, which was really just salsa with avocado in it, black beans, and rice all over tortilla chips (because I had to eat them)

February 3: Coco crisp treats (rice krispie treats but chocolate). These ones are shaped to look like Baymax :3 Valentine’s day gifts for my friends.

February 11: Tortilla crusted chicken with Mexican rice

A couple ingredients were missing but the rice turned out fantastic!

February 17: Second tortilla crusted chicken, only with the missing ingredients. Turned out better!

Still missing avocado in the salsa but overall completed and delicious.

February 28: Sushi! I didn’t actually cut or make the rice, but I did put it all together so that still counts!

March 2: Roasted sausage, potatoes, onion, and capsicum with rosemary. It was so delicious!

March 4: Mozzarella chicken with garlic pasta and bruschetta. It was really good, although I still need to work on timing for things.

March 5: Sugar cookies from scratch. I am getting so much use out of my new microwave oven that I bought!

March 8: Vanilla cupcakes from scratch with a chocolate ganache and strawberry on top. Turned out better than my cookies.

March 18: Taco casserole (even though I was getting crap for calling it such). First casserole and it was good πŸ™‚ It is a lot of food though so I will be having leftovers for a while.

March 18: Pancake in muffin form. Just straight up pancake mix in a cupcake tin so they are portable.

March 25: Rigatoni with bolognese sauce. First time making bolognese sauce and it was so delicious!

March 30: Cheesy chicken and rice casserole. It could have used a little more seasoning and I cooked it late at night so I was super sleepy, but it was still good.

April 15: Fried egg on avocado toast. I haven’t eaten my own fried egg before because I didn’t usually like it. Now I really do, especially with avocado on toast!

April 18: First attempt at tamagoyaki. I think less sugar and more finesse but it still turned out good.

April 23: The hardest thing I have made thusfar. Four cheese ravioli and pesto cream sauce…all made from scratch! I made the pasta by hand, made the pesto sauce, put it all together. My hands were so red and sore…but it was so worth it. Pasta was a little thick but I only had a rolling pin (more like a cylinder piece of wood) to work with.

Next time, enable the help of a pasta roller thing instead of just a rolling pin...old school rolling pin. γ„γŸγ„οΌ

April 27: I had so much leftover filling from the raviolis that I did not want to waste because cheese is expensive here! So I put it on some English muffins, put some salami on top, and made mini pizzas. Pesto sauce as the sauce, ravioli filling, and a giant piece of salami on top. Bake to perfection ^-^

May 4: French toast! I know it is super easy to make but I never made it before!

May 10: Omurice! First attempt at omurice. I kept breaking the egg omelet so it doesn’t look pretty T_T But it still tasted good, especially after I added cheese πŸ˜€

Finished omurice. Whenever I see omurice, I am reminded of that maid on a jetski who had to draw a heart on omurice out of ketchup. She succeeded.

May 26: Baked avocado with an egg in it. Yeah…I know. I already broke my resolution but whatever! It is now just a personal thing I want to do rather than I must stick to it.

Seriously, crack an egg in anything and it makes it super delicious.

May 31: Easy baked chicken with a side of avocado. Because no meal is complete without avocado.

June 7: Easy chicken noodle soup. Even though it wasn’t that cold, I wanted to use my new Nessie ladle.

June 17: Another recipe of Parmesan crusted baked chicken. Can you sense a theme of things I like to cook/only able to cook?

July 5: I took a bit of a hiatus for reasons but now I am back! Honey mustard mozzarella chicken with a bruschetta salad. I had extra tomatoes I needed to eat so I just made bruschetta without the bread.

And of course, with avocado.

July 12: oven baked salmon. Prior to this, I attempted chicken and dumplings but it was a fail ^^; This turned out great!

So quick and easy. This will definitely turn into a staple bento food for me from now on.

July 14: Boiled egg and onigiri. Yes, this was my first time ever boiling an egg (successfully). I boiled an egg a week prior to this one but it was a fail. I have unlocked the hidden power of a boiled egg…
